I’m not sure whether or not you all will just be completely grossed out by the look of this dish, or will find it delightful. I was keeping my Teriyaki flavored Tofu frozen and made the mistake of thawing it before putting it into this dish. So it got kind of crumbly. It didn’t affect the taste, so I made the dish anyway.
Ingredients:
Half a zucchini
2 small yellow squash
1 small onion
1 package of Tofu
1/8 cup Soy Sauce
1/4 cup Teriyaki Sauce (adjust the sauce measurements to your liking).
You can omit the Teriyaki sauce if you bought Tofu that was Teriyaki flavored.
Directions:
Cut and then saute Vegetables in a skillet. When everything has softened nicely add your tofu, Teriyaki sauce and soy sauce. Cook for another 8 minutes, or until everything has absorbed the sauces well. Serve with a side of rice if desired.
Prep and cooking time: About 25-30 minutes. Serves 4-5.
It makes a deliciously simple, yet healthy meal! And my kids even eat it!

I’ve never, ever used tofu. Wouldn’t even know where to begin. I’m a beef girl.

P.S. I noticed you said your kids “eat it”. Do they like it? And was there any waterboarding involved!? lol : D If you tell me they liked it, I’m adding tofu to my grocery list pronto! ; )
tofu is awesome because it absorbs the flavor of the food it is with. It absorbs the teriyaki and soy sauce very well and tastes wonderful. Normally you want to cut it into cubes, but if it gets crumbly you can still eat it.
I was very happy with the results of my cook-it-Wednesday! I divided 9 & 1/2 lbs of pork butt between 2 crock pots, used Ninja’s recipe for pulled pork (1 can beer, grilling spices, cook on low all day) and the result was 5 containers of delicious pulled pork and each container contains one dinner for 3 plus 2 lunchs for 2…so, that means I froze 10 meals for later! I also froze 2 gallon size baggies of stewed tomatoes!
Thank you for the recipe and info. I like tofu. My husband is suspicious of it, but I’m hoping that he’ll like this recipe since your kids do.
