I’m going to be participating in Baking Day on Tuesday, which will be hosted by Money Saving Mom and Life As Mom. We’re going to spend the day on Tuesday cooking and baking in bulk. You’ll be able to follow all of the buzz on twitter under the hashtag #BakingDay. I’m leaving Wednesday evening to head out to San Francisco, so Tuesday is the perfect time for me to make up some meals for my family to have while I’m gone.
Here’s what is on my to-do list to cook up on Tuesday:
Impossible Cheeseburger Pie (double batch because this is our fav!)
Banana Bread & Muffins (got a good recipe you recommend? – I like trying new ones!)
Beef Goulash – Cooked This Monday night while I made dinner. That’s one thing off my list!
Super Easy Sweet Potato Casserole
Corn Fritters (maybe)
Hash Brown Casserole (using a crock pot)
Cook Green Beans
Finnish Pancakes (will share recipe later)
I may be biting off more than I can chew with this list, seeing as I still need to pack and there’s a lot of laundry to do this week (I’m really behind on laundry..urg), but I’m hoping to get the majority of this list done so that meals are taken care of for most of the week. I plan on participating as well. This time I think I am going to focus more on meals, than breads/cookies/muffins like I did last time. Excited that you linked your meal recipes–I may just have to nab some!

I plan on attending unless something comes up on Tuesday. Here is the big list I am considering….will whittle it down a bit by Monday by the time I finish my Meal Plan Monday and after I see what I have on hand and what I need to buy–Brownies, Pumpkin Roll, Pumpkin Bread, Apple Pie or Apple Buckle, Choc. Chip Scones, Bread Pudding, French Bread and Brioche.

I make this at least once a week and my kids love them. Be sure to read all the reader comments. Lots of good tweaks to try.
Here is the Banana Bread recipe I use. I usually add 1/2 cup of walnuts or mini chocolate chips as well.
Banana Bread
Ingredients:
1 cup mashed bananas (about 2 big ripe ones)
1 cup sour cream
1/4 cup margarine or butter
1 1/3 cups granulated sugar
2 eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1. Preheat oven to 350. Grease and flour your pan(s).
2. Combine banana and sour cream. Set aside. In a large bowl, cream together the margarine (or butter) and sugar until smooth, light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and banana mixture.
3. Combine all the dry ingredients (flour, baking soda, baking powder and salt); stir into banana mixture. Spread the batter evenly into the prepared pan(s).
4. Bake for 40-50 min in the preheated oven, or until a toothpick inserted near the center of the bread comes out clean.

Here’s the Banana Nut Bread recipe we use:
Ingredients
3/4 c. sugar
1/2 c. butter
2 eggs
2 med. ripe bananas
1/3 c. milk
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. nuts
Heat oven to 350 degrees F.
Grease 9X5 or 8X4 loaf pan.
Beat sugar and butter until fluffy.
Beat in eggs.
Add bananas, milk, and vanilla. Stir until well integrated.
In separate bowl, combine flour, baking soda and salt.
Stir dry ingredients into wet.
Stir in nuts.
Bake 50 to 60 minutes until toothpick in center comes out clean.
Turn out of pan immediately.
Cool completely before wrapping to store in fridge if there’s any left!

OK, here’s my question. I am always so concerned about freezing entrees because I never know how they are going to turn out. For example, I have used the spaghetti broccoli bake recipe before (never frozen it), but how do you keep it from separating? I always worry about things with creamy sauces. Tips?

I’d like to make the cheeseburger pie and goulash but at what point do you freeze them? What are the reheating instructions? I’ve never done the “freeze for later” thing…

The Thrifty Mama here: I don’t usually freeze them. I usually make enough to last for meals for the week. And trust me, it all gets eaten up. But, I’m assuming you could freeze the whole thing right before the baking part (for the cheeseburger pie). For the goulash, you could make the mixture and not the pasta, and then freeze. But I’m not really a freeze big meals kind of person, although I would like to try it!

Hey everyone if you go to money saving mom and follow the links you will end up at a blog for once a month cooking. It teaches you everything and has recipes. I don’t have a lot of room in my freezer but after going to the blog I am determined to try this out.
The Impossible Cheeseburger Pie is a hit in this house. Great list. Good luck getting it accomplished.

On the hot potato salad, can you substitute Ranch dip mix in place of Ranch salad dressing mix

On the cheeseburger pie, this great recipe can be mixed up a lot of ways and is always good. Our house favorite uses a half pound of sausage instead of ground beef. We leave out the tomato and add in some lightly cooked, diced onion and bell pepper. Left over ham is also great for the meat (use a heaping cup of diced cooked ham). It makes it more like a quiche.
Made homemade Potato Soup and mexican cornbread muffins today for dinner. Also opened a pumpkin and roasted the seeds.
Last night made Beef Barbeque bowls and slaw. Yummy!
Both were inspirations from recipes in the Publix magazine that just came out.
