The Cheeseburger Pie is in the oven cooking, and the Hash Brown Casserole has been the crock pot now for several hours.  The kitchen is so warm and everything smells delicious.  The muffins are done and in the fridge.  I used Kim’s recommendation for a recipe, but tweaked it just a bit. I left out the butter, and added cinnamon and allspice. These were so delicious and creamy, that you can’t even tell there isn’t any butter.

For the sweet potatoes, I just baked them with a little water in the oven until they were soft (about 30-45 minutes).  Then I blended them up with a hand blender, placed them in a dish and put butter and brown sugar on the top.  This went straight into the refrigerator and will be ready to heat in the oven some time in the next couple of days.

Last night I made the beef goulash, and that is in a container ready to heat up for a quick meal.  While I am waiting on the hash brown casserole and cheeseburger pie to finish, I am going to steam the green beans. When that is done I think I am calling it quits. I’m exhausted from shopping earlier, cooking and watching the kids, so I think I need to get some rest before my flight tomorrow.

Do you freeze the goulash and then reheat?

I believe you can do that Jen. But mine is just in the fridge for use in a couple of days.

everything sounds good except for goulash- I have never had it before.
I am glad to see you post some receipes – I really enjoy seeing those posted as well as the good deals.

We are having roasted turkey breast, mashed potatoes, fresh green beans, fresh corn on the cob and carrot cake – but I don’t have any cream cheese so I need to think of a good alternative to our USUAL. I was thinking caramel frosting but I don’t know if that will be so good with the carrots, pineapples and walnuts in the cake.
