When you want to serve bread, but don’t have time for yeast recipe, this buttermilk quick bread is a versatile choice.
Ingredients
- 1-1/2 cup organic unbleached wheat flour
- 1/2 cup steel cut oats
- 2 tablespoons sucanat
- 1-1/2 teaspoons aluminum-free baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon sea salt
- 1 cup organic buttermilk
- 1 large egg, beaten
- 1/4 cup organic unsalted butter, melted
Instructions
- Heat oven to 350 degrees. Grease a 9x5 loaf pan.
- In a medium bowl, mix together the flour, oats, sucanat, baking powder, baking soda, and salt.
- In a separate small bowl, whisk together the buttermilk, egg, and butter.
- Make a well in the middle of the dry mixture. Pour wet mixture into the well.
- Use a rubber spatula, to fold the ingredients together until the dry ingredients are barely incorporated. Batter will be thick and soggy, resembling a muffin batter.
- Pour batter into prepared pan.
- Bake for 45 minutes or until toothpick inserted into the center comes out clean.
- Cool in pan on cooling rack for 10 minutes.
- Remove from pan and cool for another 10 minutes before serving.
- Store any leftovers at room temperature secured tightly in plastic.
Suggestions for ingredient substitutions:
- Replace all or part of the butter with:
- olive oil
- coconut oil
- applesauce
- banana puree
- You could replace the oats with:
- whole wheat flour
- soy flour
- finely ground almond meal
- corn meal
- another flour substitute
- Replacements for buttermilk:
- 1 cup plain organic kefir
- 1 tablespoon of lemon plus milk to make 1 cup
- Reconstituted buttermilk powder
Suggestions for recipe additions:
- Sugar can be increased to 1/2 cup for sweeter breads.
- Use up to 1-1/2 cups fruits, nuts, meat, cheese, vegetables, or whatever suits your fancy, added to the dry ingredients.
- Add up to 3 teaspoons of organic dried herbs and spices, added to the dry ingredients.

- Replace the oats with whole wheat flour.
- Add
- 1/2 cup pepperoni, diced
- 1/4 cup parmesan, grated
- 2 tablespoons sun-dried tomatoes, diced

- 2 tablespoons onion, diced
- 1 clove garlic, minced
- 2 teaspoons Italian seasoning mix or oregano
- Serve with homemade pesto.
Taco Bread
- Replace the oats with corn meal.
- Add
- 1/2 cup ground beef, browned, drained well
- 1/2 cup pepper jack cheese
- 2 tablespoons jalapenos, diced
- 1 tablespoon onions, minced
- 1 clove garlic, minced
- 2 teaspoons taco seasoning
- Serve with salsa and sour cream.

- Increase sucanat to 1/2 cup.
- Add
- 1 cup apples, diced
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- Serve with apple butter.
Veggie Overload Bread
- Add
- 1/4 cup carrots, grated
- 1/4 cup zucchini, grated
- 1/4 cup spinach, fresh, finely chopped
- 1/4 cup onion, minced
- 1/2 cup sharp cheddar, shredded
- 1/4 teaspoon thyme, dried
- 1/4 teaspoon rosemary, dried
- Serve with plain yogurt and fresh.
Chock Full of Seeds & Nuts Bread
- Increase sucanat to 1/2 cup.
- Replace oats with almond meal.
- Add
- 1 tablespoon whole flax seeds
- 1 tablespoon whole sunflower seeds
- 1 teaspoon almond extract
- 1 cup mixed chopped nuts (peanuts, pecans, almonds, walnuts, etc)
- Serve with honey.
Cherry Coconut Pecan Bread
- Increase sucanat to 1/2 cup.
- Add
- 1 teaspoon vanilla extract
- 2/3 cup cherries, dried, chopped
- 1/3 cup coconut, shredded, unsweetened
- 1/2 cup pecans, chopped
- Serve with maple butter.
