Have you ever seen or tried a Spaghetti Squash?  You cook it up and the insides become like spaghetti noodles, only they are more crisp.  Spaghetti Squash Primavera is actually a really easy and “to die for” meal.

Go HERE for a quick and easy recipe.  We had this (without the mushrooms and pine nuts), and it was the most amazing meal we had ever eaten.

I’ve never made spaghetti squash, but had heard it really good. Not sure my boys would eat it.

Love spaghettti squash! I add diced tomatoes, sliced black olives, feta cheese crumbles, broccoli crowns, olive oil, garlic, salt, and pepper. I usually serve it with a piece of grilled chicken or a thin-sliced pork chop. Yummy!

I LOVE spaghetti squash. I cook it all the time. Its so easy AND healthy. I roast it in the oven cut in half of course with olive oil salt and pepper and garlic. After I scoop it all out I had ginger, a touch of brown sugar, salt to taste and smart balance. The last time I made it I added dried cranberries too!

I just bought a HUGE one at the West Side Market here today! I actually found an organic stand to buy it from. (If you’re not from Cleveland, you may not have heard of it, but the West Side Market is awesome!)
We are having spaghetti squash with ground turkey meat balls, mmmmm! (tonight we had italian chicken sausage with a noodle dish. I used a yellow bell pepper and tomato in with the noodles with an olive oil dressing.)

I looked at spaghetti squash at the grocery last night but all of them were huge (bowling ball size) and I didnt want that much just for myself. Are they always that big or do they come in smaller sizes?

CJ – they are usually big, but I wouldn’t say the one I got was bowling ball size. It was about half the size of a bowling ball.
