It’s another installment of Cook-it Wednesday.  Unfortunately we all seem to be coming down with something around here, and it was just chicken nuggets and peanut butter sandwiches around here (with veggies thrown in of course).   But I’d love to hear about the cooking and meal-planning you guys have been doing.   Please share your links to your posts with the Mr. Linky, or share great recipes you found across the internet.  Don’t blog?   Share with us what you’re up to in the comment section.

Made this for dinner tonight with a side of steamed broccoli. I make it fairly regularly. It’s one of our favorites. The only modification I make is I use twice the amount of chili and juice and I let the chicken sit in the marinade for several hours before coating it in the bread crumbs and baking it. I love Real Simple magazine recipes. They are easy to make, the ingredients are usually very affordable, and they are good.

Black Bean Burritos are a staple in our home. So easy, cheap and quick for those chaotic times!
