Cranberry Apple Compote

Looking for an alternative to the canned cranberry sauce served with your Thanksgiving meal?  Here’s a healthy recipe for cranberry sauce that’s a snap to prepare.  It’s a Cranberry Apple Compote that is sure to have your guests asking for seconds, and even thirds!

Ingredients:

  • 2 medium apples
  • 6 oz. of fresh cranberries (half a 12 oz. package)
  • 1 cup of apple cider
  • Juice from 1 lemon
  • 1 cup of sucanat
  • 1/2 tsp ground cinnamon
  • pinch of salt

Directions:

Peel, core and slice your apples. I use my Back To Basics Peeler Cranberry Apple Compote, because it makes it so easy!

Wash your cranberries with cool water, then mix together all ingredients in a medium sauce pan.

Bring to a boil and reduce heat.

Cover partially and simmer for 20 minutes or until thickened.

Now you have a delicious and healthy version of a Thanksgiving side that usually just comes from a can.

dumb question, do you serve it hot or cold? We never serve cranberry sauce because the solid jelly stuff that comes out of a can freaks me out, I hate how you can still see the ridges from the can. YUCK! but as a kid, when it was still cool to eat tv dinners (more yuck I know) I remember that cranberry stuff that they served with the turkey and it was over graham cracker crust and I actually like the stuff, so I do like cranberries, just not in the form of jelly from a can.

This looks great! Do you think this would make a decent filling for filled pastries?

Also, you can always reduce the sugar content of something with cranberries in it by adding just a teensy bit of baking soda while cooking. It neutralizes some of the acidity, so the sugar doesn’t have to do all the work!

I tried this recipe, but it didn’t thicken. I didn’t have the apple cider, so I substituted a cranberry juice I had at home…not sure if that was the problem or not, but it was very watery. It smells delicious and almost looks like a hot cider I could serve as a drink…any thoughts on why it didn’t thicken? Thanks!

You may need to cook it longer to get the excess liquid off. You might try adding some arrow root or potato starch if you have it.
