Date Nut Bread – Naturally Good

I’m very quickly turning into a cookbook collector, because I just love sifting through the pages of a good cookbook and trying new recipes. I found a great recipe in “Family Favorites from the Homeschool Kitchen”  cookbook for Date Nut Bread.  I did a little bit of tweaking to the recipe to make it more healthy, and this is what immersed:

3/4 cup Chopped Almonds or other nuts
1 cup of Chopped Medjool Dates
1 1/2 tsp of Baking Soda
3 tbs of Coconut Oil (use butter or shortening if you don’t have it)
3/4 cup boiling water

Mix together with a fork and let sit for 20 minutes. In a separate bowl combine the following:

1 1/2 cups of whole wheat flour (freshly ground in my grinder)
2 eggs lightly beaten
1 tsp vanilla
1/2 cup of Agave Raw Sweetener (or 1 cup of regular sugar)

Once you have waited the 20 minutes, mix it all together and pour into a greased baking dish.  Bake for about 40 minutes at 350.

When using nuts and fruit of any type in a recipe, reserve a little of the recipe called for flour and coat the nuts and fruits with that before adding to the recipe. That way, the fruits and nuts do not sink to the bottom of the recipe when baking.
