Goji Almond Salmon Sandwiches

With the summer hitting hard all of a sudden, I’m trying some new, cooler recipes that don’t require me to use the oven. It makes the kitchen like an inferno, and I’m just not ready to suffer through that when it’s only April!

Here’s a healthy Salmon Sandwich recipe that was a hit when I had family over this past weekend, so try it out and let me know what you think.

Goji Almond Salmon Sandwich Recipe

Ingredients:

  • 2 Cans of Wild-Caught Alaskan Salmon (Costco – has the best price)
  • 1/2-1 Cup of Mayonnaise
  • 1/4 Cup of finely chopped Almonds
  • 1/4 Cup dry Goji Berries
  • 1/4 tsp finely chopped fresh Basil
  • 1/4 tsp fresh Rosemary
  • Half medium finely chopped Sweet Onion
  • Pinch of Salt
  • 1 cup of fresh Baby Spinach
  • Whole Grain Bread

Directions:

Mix all ingredients, except for the Spinach and Whole Grain Bread, together in a large bowl. Spread mixture on Whole Grain bread, and top with Spinach. Makes approximately 9-10 sandwiches.

Goji Almond Salmon Sandwiches serve well with a fruity, refreshing drink like orange juice.

Variations: Instead of Salmon, use Tuna, and substitute grapes, raisins or dried cranberries for the Goji Berries. Dry herbs can also be used instead of fresh.

Simple, cool and a very healthy Spring and Summer sandwich. Wild-Caught Alaskan Salmon is a healthier choice and richer in Omega Fatty Acids than farm raised, and Goji Berries are one of the most nutrient-rich foods on Earth.  They are packed with protein, essential amino acids, 20 trace minerals, rich in vitamin A and a good source of vitamin C.

Wow! I never would’ve thought to put Salmon and Goji berries together, but it sounds like a great idea!! I love Salmon and I love goji berries, so I’m going to have to try this!

I bet you will love it! My mouth is watering just thinking about this…I feel like Homer thinking about doughnuts, but I’m thinking about something healthy..ha!
