Mission Foods contacted me and wanted me to come up with a recipe using their tortillas. Since they are also one of the Savvy Blogging Summit partners, I was more than happy to share a recipe with my readers. This is actually a pretty simple, inexpensive and yet healthy recipe that can be done on the fly.

TTM’s Chicken Sausage Breakfast Burritos

Ingredients:

All natural pre-cooked chicken sausage with spinach and feta ($4.98 a pack at BJ’s Wholesale Club)
6 scrambled eggs (preferably cage free or organic)
1 chopped green bell pepper
1 small onion (diced)
Mozzarella cheese
Olive oil
Mission Tortillas (go for the Whole Grain or Whole Wheat)

Directions:

Cook chicken sausage in a skillet with olive oil until warmed, then add chopped pepper and diced onion. Lightly saute onions and peppers until soft and onion is slightly translucent. Add in eggs that are already scrambled and remove from heat. Top with slices of mozzarella cheese and let it melt. Add these to your Mission Tortillas, and enjoy as a family. Feeds a family of 4-6. Cost: $10 or less.

These can be for breakfast, lunch or dinner. We have found this to be a very fulfilling and tasty dinner.

While I do like making my own tortillas from scratch a lot, it is nice to keep a bag of pre-made tortillas on hand for when I’m in a time-crunch.

I make mine with scrambled eggs, shredded cheese and cut up breakfast sausage links and Mission tortillas, I like the tomato basil and spincih herb the best.
