While growing up in a small North Georgia town, one of my favorite things to do on a Saturday was going to the Square with my dad and browsing through the old shops. We always stopped in the General Store, where amongst the assortment of knick-knacks and the coin-operated piano there is a corner dedicated to two roasted treats. Dad always had a 5 cent cup of coffee, and I a handful of freshly shelled peanuts.
These are still one of my favorite “comfort foods.” So how could I pass up the ridiculously large, and inexpensive, bag of roasted goodness I found on my last shopping trip?
Of course, I don’t plan to eat them all plain. I have many plans for these legumes: peanut butter pie, protein for smoothies, honey and peanut butter sandwiches, and celery “sail boats” to name a few.
The first step to all this deliciousness is to make your own peanut butter.
For 18 ounces of peanut butter you will need:
- 4 1/2 cups of shelled, roasted peanuts
- peanut or sunflower oil
Directions to Make Your Own Peanut Butter:
1. Shell peanuts if they aren’t already.
2. Loosen red skins. If you don’t want to remove each skin individually, just loosen them a bit by rubbing them between your fingers, then step outside and blow all the loose red skins out of the bowl.
3. Grind the peanuts. Using a blender or food processor, grind the peanuts one cup at a time.
4. Return all ground peanuts to blender/processor and add the oil, one tablespoon at a time until you reach the desired consistency. The amount of oil you need depends on how much is in the peanuts. Mine seemed rather dry, and I ended up adding 5 tablespoons of sunflower oil. If you have peanut oil, even better, but any oil that has very light to no flavor will work.
5. After five minutes of grinding it wasn’t exactly creamy, but much like the texture of peanut butter you would find at the grocery stores that have the in-house peanut grinder. If you want it smoother, just keep grinding another five minutes, stopping frequently to scrape the peanut butter off the sides and back into the bowl.
6. Spoon into a jar and refrigerate.
Chocolate Peanut Butter Version
I also took some of the peanut butter and added chocolate. Now, don’t expect this concoction to taste a thing like Nutella – this is for dark chocolate lovers. For each cup of peanut butter, add 1 1/2 teaspoons of cocoa powder and 1 1/2 teaspoons of honey. Mix well, and spread on bananas slices or graham crackers.
