#HealthyNewYear Recipe: Quinoa with Mixed Veggies

Quinoa with mixed veggies is so simple to make, and this packed with protein and vegetables meal is sure to jumpstart your #HealthyNewYear. This recipe uses Quinoa, which is a high protein grain. Instead of using rice, try using Quinoa instead for more added protein in your diet.

Rinse Quinoa and combine with water in a medium sauce pan. Bring to a boil and then reduce hit and simmer. Add in mixed vegetables, salt and whichever herbs and spices you prefer. A teaspoon of Basil and Oregano is a good place to start, and you can go from there depending on your tastes. Stir occasionally until water is absorbed. Makes in about 15-20 minutes and serves 4-6.
Once you get good at making it, you can adjust the seasonings to make it how you like. The possibilities are endless. The nice thing about this recipe, besides the fact that it is healthy and easy, is that it is also inexpensive. By my estimation it costs less than $5 to make.
