Cast iron is a valuable tool in any natural kitchen. Use oil and salt when your pans need minor rust removal.
If you find a great piece at a thrift store or yard sale with years of caked on rust, don’t let that discourage you from grabbing the deal. Severely rusted pots and pans (with no cracks) can almost certainly be restored with vinegar.
Don’t forget to properly season your pans again once they are clean and always dry them completely in the oven if you ever do wash them with water.

thank you for posting, recently I have got back into using cast ion andwell sme have bee well rusted. I have larned ho hat when the othe halfis blackneng food that cleanup done immediately is alot easier than late…
I baked our cornbread tonight & everytime I bake cornbread, in the cast iron skillet that we purchased 40 years ago!
I’m going to have to try the vinegar. I got a great piece, a deep skillet with a lid and I spent a lot of time working on it with salt and oil, but it still has this rancid smell. I’d love to get it usable.
