Need something fast for dinner that has plenty of omega fatty acids? Here’s a quick recipe that should take you about 25 minutes to make if you use leftover rice.
- 1 Can of Salmon Drained (preferably wild caught – or you can use Tuna)
- 1 Can of Cream of Mushroom Soup
- 1/4 Cup Whole Milk
- 2 TB Raw Flax Seeds
- 1 TB Melted Butter
- 3 Cups of Whole Grain Cooked Rice
- 1/4 tsp rosemary
- 1/4 tsp basil
- 1/4 tsp garlic (fresh or ground)
- 1/8 tsp cayenne pepper
- 1 1/2 tsp Sea Salt
All ingredients can be organic.
Preheat oven to 350. Mix all ingredients together in a mixing bowl, place in a greased baking dish (I grease mine with coconut oil). Cook for 20 minutes. Let cool, then serve. Serves 4-6.
This makes a delicious and simple meal, or you can use it as a side dish. Both the Salmon and the Flax Seeds are a great source of Omega Fatty Acids.
If you want to, you can crumble crackers on top of the mixture with a little butter to have this au gratin.
