While we're waiting on spring to be sprung, let's savor the flavor of winter with this delicious organic chicken chili recipe.  Snowy weather watch out!

Organic Chicken Chili Recipe

Ingredients

  • (Remember to choose organic whenever possible.)
  • olive oil
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1 large onion, roughly chopped
  • 1/2 cup celery, chopped
  • 8 cloves garlic, peeled and chopped
  • 1.5 lbs boneless, skinless, chicken thighs
  • 1 cup water
  • 1 teaspoon Better Than Boullion Chicken Stock Base
  • 2 cans diced tomatoes
  • 1 cup cooked corn kernels, no liquid
  • 1 cup cooked black beans, no liquid
  • Kirkland No Salt Organic Seasoning
  • 3 tablespoons chili powder
  • 3 tablespoons ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon red chili flakes
  • salt and pepper to taste
  • 2 drops liquid smoke

Instructions

  1. In a large pot, heat the oil.
  2. Add peppers, onion, celery, garlic, and chicken.
  3. Toss gently to coat with oil. Saute until chicken is lightly browned on the outside.
  4. Add water and chicken base. Stir to dissolve the base.
  5. Bring to a boil over medium heat.
  6. Cover and cook 10 minutes until chicken is thoroughly cooked.
  7. Add mixture slowly to a heat-safe blender and pulse until there are no large chunks remaining.
  8. Return to pot.
  9. Repeat the blender pulsing in increments until all of the mixture has been chopped/pureed.
  10. Add tomatoes to blender and puree.
  11. Add tomatoes to the pot and return to medium low heat.
  12. Stir in all remaining ingredients and bring to a simmer.
  13. Simmer for 1-2 hours stirring occasionally.
  14. Add salt and pepper to taste.

Easy Organic Quinoa Vegetable Dish Recipe 2 Easy Organic Quinoa Vegetable Dish Recipe

Ingredients

  • 1 cup quinoa
  • 3 tablespoons coconut oil (divided)
  • 2 cups water
  • 2 teaspoons Better Than Bouillon Organic Vegetable Broth Base
  • 1 clove garlic, peeled and minced
  • 1/2 onion, chopped
  • 1 stalk celery, diced
  • bell pepper, diced (1/3 orange, red, and yellow bell pepper)
  • 2 cups kale, chopped
  • Salt and Pepper, to taste

Instructions

  1. Rinse quinoa in a fine mesh strainer. Drain well.
  2. In pan, heat 1 tablespoon coconut oil over medium heat.
  3. Add quinoa and cook in coconut oil until all water from the rinse is evaporated.
  4. Add 2 cups water and bouillon base.
  5. Bring to a boil.
  6. Cover and reduce heat to medium-low.
  7. Boil covered for 15 minutes.
  8. Remove from heat and let sit covered an additional 5 minutes.
  9. While the quinoa finishes, saute the garlic and all the vegetables in 2 tablespoons coconut oil.
  10. After the 5 minute rest, fluff the quinoa and stir in the vegetable saute mixture.
  11. Add salt and pepper to taste.
  12. Enjoy!

Ingredients

  • 2 tablespoons organic sucanat or coconut palm sugar
  • 1 cup organic whole wheat flour
  • 1 cup organic brown rice flour
  • 1/4 cup organic ground flax seed
  • 4 teaspoons aluminum-free baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons organic ground cinnamon
  • 1-1/2 cups organic milk (or milk substitute)
  • 1/4 cup organic coconut oil
  • 2 organic eggs
  • 1 teaspoon organic vanilla extract
  • 1 large organic Granny Smith apple, cored and chopped
  • 1 cup organic nuts (pecans or walnuts are best)
  • 1/2 cup organic maple syrup (any grade will work)

Instructions

  1. Heat oven to 350 degrees.
  2. Grease 9X13 pan with coconut oil.
  3. Combine sugar, flour, flax seed, baking powder salt, and cinnamon in a large bowl. Set aside.
  4. Warm milk and coconut oil in a small pan or microwaveable cup until coconut oil is just melted.
  5. Combine milk mixture, eggs, and vanilla into the flour mixture. Stir just until moistened.
  6. Add apple and stir a few times to integrate.
  7. Pour mixture into prepared 9X13 pan.
  8. Sprinkle nuts over the top.
  9. Bake for 20 - 25 minutes or until toothpick inserted into center comes out clean.
  10. Pour maple syrup over the entire pan.
  11. Serve warm.

Naan is a flat bread that has become our go-to bread in this house.  We're sharing our tried and true homemade naan recipe with you in hopes that you can enjoy this easy and delightful dish with your family.

Hearty and Healthy Homemade Naan Recipe

Ingredients

  • 1 cup very warm water
  • 7 oz Greek yogurt, plain
  • 2 tablespoons sucanat
  • 1/4 cup ground flax seed
  • 1 tablespoon coconut oil
  • 2 teaspoons salt
  • 3 cups whole wheat flour
  • 2-1/4 teaspoons yeast
  • 1 clove garlic, minced
  • olive oil or butter

Instructions

  1. In a large bowl, combine all ingredients except garlic.
  2. Mix until very stiff ball forms.
  3. Remove from bowl and knead on lightly floured surface.
  4. Knead until smooth (about 7 - 8 minutes).
  5. Place dough in well-oiled bowl and cover with damp towel.
  6. Let rise in warm, non-drafty area for one hour or until dough is doubled in volume.
  7. Punch down dough and knead in garlic.
  8. Form dough into golf-ball sized balls and place on a cookie sheet.
  9. Cover with damp towel and allow to rise 20 minutes.
  10. Heat griddle or pan to 375 or medium-high heat.
  11. Use hands or rolling pin to flatten each dough ball to around 1/4 inch thickness.
  12. Brush both sides of dough with olive oil or butter.
  13. Place dough on heated griddle or pan and cook for 3 minutes (or until lightly browned and puffy).
  14. Turn dough over and cook another 2 - 4 minutes until lightly browned.
  15. Allow cooked naan to rest in a covered dish until served. Serve warm.

Easy Sweet Potato Casserole Recipe

Ingredients

  • 2 large sweet potatoes, skinned and cubed
  • 2 large Granny Smith apples, cored and cubed
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 2 tablespoons coconut oil
  • 3 tablespoons honey + additional for glazing top
  • 1/3 cup coconut flakes
  • 1/3 cup oats
  • 1/2 cup nuts

Instructions

  1. Heat oven to 350 degrees. Coat 2 qt glass casserole or 8X8 pan with coconut oil.
  2. Mix sweet potatoes, apples, vanilla, cinnamon, oil, and honey until potatoes and apples are coated.
  3. Pour mixture into greased pan.
  4. Sprinkle coconut, oats, and nuts over the top.
  5. Glaze lightly with additional honey.
  6. Cover with aluminum foil or glass lid.
  7. Bake at 350 degrees for 50 minutes or until potatoes are fork tender.
  8. Remove the lid and bake another 10 minutes until topping is lightly golden brown.
