Whole Grain Rice Pudding

Whole Grain Rice Pudding is the perfect down-home dessert for these cold winter months, if you like your rice pudding warm like I do! Here’s a simple way to make a healthy treat:

Ingredients:

Directions:

Mix water and rice in a medium sauce pan and bring to a boil.  Let boil for about 15 minutes, stirring occasionally.  Drain the rice, and mix milk and rice in the same saucepan.  Bring to a near boil, reduce heat to low and cover.  Simmer for about an hour, stirring occasionally so that the rice doesn’t stick to the bottom of the pan.  Don’t open and stir it too often!

Remove from heat and add in your vanilla extract, coconut oil and sucanat.  The pudding should be thickened up and nice and creamy at this point.  Serve with a sprinkling of cinnamon on top.  Serves 6-7.  If your pudding is too dry, stir in a little fresh milk and it will be nice and creamy!

When I printed this out the ingredients are not there! Why??????????? Do I feel like the fool sharing this on my facebook page! The ingredients are there on the first page but when you go to print it no ingredients! I didn’t think to look at the recipe before I printed it and was talking to my daughter telling her about it when I realized there were no ingredients listed.

Mmm, this looks yummy. I might have to try this tonight or maybe right now. :)

We just took the plunge, adjusted our budget, and have switched to organic milk. I’m happy with our choice. Thanks for all your encouragement towards a healthier diet without utterly breaking the bank!

Do you have a good recipe for corn pudding? My boss makes it but won’t give out the recipe. Thought it might be something different to take for a Thanksgiving or Christmas dish to pass.
