Pancakes done with whole ingredients actually make a fairly healthy breakfast. I find that pancakes made this way taste fantastic, and I don’t feel bad about my children eating them in the morning.
How to Make Pancake Mix from Freshly Milled Wheat
Ingredients:
- Wheat Berries (organic, soft white works best for pancakes)
- 1 cup of raw sugar
- 1 T Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
Directions:
- Mill your grains into a nice flour. A soft white wheat (preferably organic) is best for muffins and pancakes. If you use a harder grain, you will need to sift the flour through a sifter before moving onto the next step.
And if you don’t have a wheat mill, a coffee grinder will work and sometimes even a blender. You will just have to do small amounts at a time. For those of you wondering, I have a BlendTec mill, but I am not a fan of it. It is noisy, and makes a mess in my kitchen.
- Move the flour to a gallon size freezer bag. Fill the bag up about half way.
- Add in the other dry ingredients, close the bag and mix up the ingredients really well.
- Place in the freezer so that the flour doesn’t go rancid.
- 2 Cups Whole Wheat Pancake Mix (what you just made)
- 1 Egg
- 1 T Oil (Coconut Oil makes the yummiest pancakes!)
- Water or Milk to your liking
- Mix all ingredients together with your mixer, and mix until you reach the desired consistency. Add more pancake mix if your batter comes out too thin, or add more milk/water if you want it thinner.
- Oil your pan, and warm it on low-medium heat.
- Poor pancakes and heat until brown on one side and then flip with a spatula to brown the other side.
- Enjoy pancakes with your favorite topping. Our favorites are applesauce, and of course maple syrup.
To Make Whole Wheat Pancakes
Ingredients:
I never use the same amount of milk or water every time, because sometimes we like our pancakes thin, and at other times we like thick ones.
Directions:
If you want to, you can mix things up by adding blueberries, chocolate, cinnamon or other fabulous ingredients to liven up your pancakes. What are some of the things you like to add to your pancakes? I LOVE seeing this post! I grew up on these kind of pancakes every Saturday morning with flour ground the same way as had more Vitamin E that way. For a special, special treat, we would have them with strawberries and ice cream–yum!
What a great idea! I never get around to making pancakes anymore b/c I usually don’t have time to mill, etc. I will try this out for size.
Oh I wish I had a grain mill…. One day:)
Have you tried soaking the mix? Just curious about how much water it would take and still be able to add the egg and oil in the morning and not have it end up too runny…
Hey Celena – I have not tried soaking it. Let us know if you do and how it works!
Yeah, I wonder how I would make these without having a mill. I mean, I could always buy something like Bob’s Red Mill, but that’s not the point. I like making my own homemade pancake syrup my heating 1 cup Pure Organic Maple Syrup with 2-3 tbsp butter, and maybe adding some vanilla or cinnamon. MMMMmmmm.
Thanks for this post. I have been looking for a good pancake mix recipe! I will try this! Glad to see your opinion on the BlendTec Mill. I’ve been looking to get a new one and was thinking of this one… guess not!
Don’t get a mill–get a Vita Mix with a dry blade–works wonders!
I bookmarked this so long ago, but finally got out my Vitamix and gave this a whirl. The pancakes turned out so yummy! The coconut oil really gives it a lovely touch of flavor. (For others who don’t trust themselves in the kitchen, I ground a little over 6 cups of wheat berries to fill the ziplock about halfway. I also used 1.5 cups of milk and that gave us a great pancake thickness, although I’m not sure why, but the last few were much thicker than the first few I cooked.) Thank you, Crystal, for sharing this and everything else that you do. While I rarely post, I am learning so much from you and working to implement healthier eating/living. Next up are homemade liquid and pepperoni!
